Inspired by ‘The Roasting Tin’, a simple yet satisfying dish, perfect for a weeknight meal. This one-pan wonder combines succulent sausages with roasted root vegetables for a comforting and delicious meal.
Ingredients
Sausage, Potato, Parsnip & Red Onion Traybake
8-12 pork sausages
2 large baking potatoes (and/or sweet potatoes), peeled and cut into chunks
2 large parsnips, peeled and cut into chunks
2 red onions, peeled and cut into chunks
6 cloves of garlic
4 tsp smoked paprika
2 tsp sea salt
2 tsp black pepper
Splash of olive oil
Method
Preheat your oven to 180ºC fan.
Toss all the vegetables together in a large roasting tin with the paprika, olive oil, salt and pepper (and any other chosen seasonings if you wish). Place the sausages on top.
Put the tray in the oven for 45-50 minutes. The potatoes should be soft and the sausages slightly crisp and brown on top.
