8-12 pork sausages
2 large baking potatoes (and/or sweet potatoes), peeled and cut into chunks
2 large parsnips, peeled and cut into chunks
2 red onions, peeled and cut into chunks
6 cloves of garlic
4 tsp smoked paprika
2 tsp sea salt
2 tsp black pepper
Splash of olive oil
- Preheat your oven to 180ºC fan.
- Toss all the vegetables together in a large roasting tin with the paprika, olive oil, salt and pepper (and any other chosen seasonings if you wish). Place the sausages on top.
- Put the tray in the oven for 45-50 minutes. The potatoes should be soft and the sausages slightly crisp and brown on top.
- Serve and eat!
