(Serves 4)



½ kilo “00” flour
9 egg yolks
2 whole eggs
1tsp table salt
50ml olive oil
Splash of water



  1. Blend all the ingredients in a food processor until a firm dough is achieved.
  2. Knead for 10 minutes until smooth and silky.
  3. Wrap in cling film and refrigerate for 1 hour.
