Our advice is to buy the best chicken you can afford, but perhaps less often. Fosse Meadow and Sutton Hoo are both great producers of slow grown, free-range chicken but otherwise we try to buy Free Range in the supermarket for the best flavour. Although more expensive it is sometimes more economical to buy a bigger bird and make several meals from it, as our grandmothers would have done!
A word on hygiene. Many people are nervous of handling raw chicken. Follow good housekeeping, such as washing your hands after touching raw meat, cleaning your boards and knives with hot soapy water. These can also be sprayed with antibacterial spray. Using a temperature probe will also give you more confidence too, guaranteeing the meat is cooked to a safe temperature.
