Chalet Cooks Course - Abinger Cookery School

As well as the 5-day Chalet Cooks Course, we offer a 10-day Chalet Cooks Course which will push your skills in the kitchen to the next level and this second intensive week will undoubtedly improve your confidence and cooking ability.

This course gives advanced training for those seeking employment in the chalet or yachting world.

Description

On the 10-day chalet cookery course you will master the basics in week one and the more advanced skills in week 2 which can significantly increase your chance of securing a job in the chalet or yachting world. Please note that it is possible to attend just for the second week, but only if you have already completed the 5-day chalet course.

We have designed a 10-day syllabus incorporating knife skills, time management, cleaning and aspects of health and safety. You will learn how to plan each week, including breakfast, afternoon tea, dinner and some remarkable canapés for pre-dinner drinks. In the second week you will be encouraged to develop your own recipes and will be taught the art of table etiquette as well as being given guidance on different cooking techniques, such as making sushi.

On your last day you will be asked to design and cook your own menu and serve lunch to the chefs. Here, you will be able to utilise what you have learnt, such as table etiquette, serving wine and time management. Relevant information will be given to you about the winter season and you will come away with an abundance of skills to make a great chalet cook with a book of tried and tested recipes. There will be an assessment of what you have achieved, concluding with the award of a certificate.

Breakfast special: kedgeree
Afternoon tea: dark chocolate sea salt cake
Canapé: pani puri
Starter: raw vegetable ravioli with goat’s cheese
Main course: confit duck leg with five-spice jus
Dessert: mille feuille with strawberries & crème patisserie
